Better than Syrup pancake topping - Apricot puree

I don't really care for pancake syrup at all. But pancakes are so quick to make and easy to stash other foods in - mashed bananas, chopped nuts, flax seed, wheat germ - you name it, I've probably tossed it into my pancake mix!

This topping is really easy and very yummy!!

Apricot puree

1 can apricots
1 tsp vanilla

Toss it all in the blender and puree. That's it. I warmed my mixture in the microwave because we served it on a cooler morning.

Yummy! This morning we had warmed frozen berries (with just a tsp. or so of sugar) on our pancakes. Fruit is an awesome sweetener. I'll have to try the apricots.
